Banana Prune Muffins

Shopping list

100 g sugar
60 ml Plumseed Oil
1 egg
1 large banana
1 tsp. vanilla
200 g all-pupose flour
1 tsp. baking powder
1/2 tsp. baking soda
1 pinch salt
1/4 tsp. ground cinnamon
175 g prunes

Instructions

Preheat oven to 175 °C. Grease and flour a muffin pan, or use paper liners.
100 g sugar combine in a large bowl with 60 ml Plumseed Oil and 1 egg Beat until smooth. Blend in 1 large banana mashed, and 1 tsp. vanilla
Mix together200 g all-pupose flour 1 tsp. baking powder, 1/2 tsp. baking soda, 1 pinch salt and 1/4 tsp. ground cinnamon Stir into the egg mixture until just moistened. Mix in
175 g prunes pitted and chopped. Spoon into muffin cups.
Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
