Spicy Cake with Sour Cherry Vinegar

300 g all-purpose flour
175 g butter
175 g fine brown sugar
1 tsp. salt
200 g raisins, sultana, currants
1 dash ground cinnamon
1 dash ground clover
1 dash ground coriander
1 tsp. baking soda
1 tbsp. milk
1 tbsp. Sour Cherry Vinegar
1 tbsp. hot water

Instructions

300 g all-purpose flour knead together with 175 g butter to a crumbly dough; add 175 g fine brown sugar, 1 tsp. salt, 200 g raisins, sultana, currants, 1 dash ground cinnamon, 1 dash ground clover as well as 1 dash ground coriander to the dough and mix well.
1 tsp. baking soda mix with 1 tbsp. milk and 1 tbsp. Sour Cherry Vinegar and add it to the dough. Also add 1 tbsp. hot water now the dough should be nice and smooth.
Place the dough into a fitting baking form and first bake at 200 °C for 20 mins. and then for about another 90 minutes at 160° C.
