Preheat the oven to 180 °C.
75 g bitter chocolate melt in a waterbath. In a bowl whisk 60 g butter and 1 tbsp. Walnut Oil and 50 g icing sugar as well as 5 egg yolks until frothy. Add 75 g ground walnuts and 50 g crumbled biscuits and the melted chocolate to the butter-sugar-egg-mixture. Whisk 5 egg whites until stiff peaks form and mix carefully into the mixture.
Grease little moulds or cups with Walnut Oil and dust with some sugar Place them in a deep baking dish or casserole, add enough water so that the moulds will be covered halfway up to the rim. Cook for 30 minutes.
Vanilla Sauce:
In a pot combine 200 ml heavy cream 500 ml milk and the mark of 1 vanilla bean and bring it to a boil.
Mix 1 tbsp. sugar with 5 egg yolks and 1 tsp. corn starch Stir into the boiling cream-milk-mixture and bring to a boil. Strain the sauce through a sieve and serve with the walnut pudding.
