Add 1 tbsp. miso paste (cold) and 1 cup soy sauce (cold) to a bowl and stir until combined. Brush 14 oz beef with the soy marinade 5 minutes before grilling. Cook the beef under the grill or fry it in a pan for about 2,5 minutes on each side and let stand for 1 minute in a warm place.
Slice 1 avocado and cut 1 cucumber and 1 mango
season with some of the marinade and 1 Thai chili chopped, then mix with wild herbs lettuce
Slice 4 apricots and 2 spring onions and gently roast them with a little bit of thyme and walnut oil
Cook 4 french baby leeks with the meat under the grill or saute it in a separate pan.
Season the salad mix with blackberry vinegar
Arrange the salad mix on a plate and place the meat, cut in thin slices, and the baby leeks on top. Sprinkle with coriander.
