2 pieces fennel grate finely.
1 piece "Granny Smith" apple and 1 package smoked Tofu cut into small cubes.
For the dressing, combine the following ingredients and mix with a hand blender:
20 g Teriyakisauce
30 g Elstar applejuice
40 g Apple Seed Oil
26 g Lemongrass Vinegar
2 g garlic
7 g brown sugar
salt & pepper
Mix fennel, Tofu and apple with 20 g roasted peanuts and mixed herbs.
Marinate with the dressing and fill into glass containers.
