Glass Noodles Salad with Cucumber and Melon

Shopping list

180 g glass noodles
3 spring onions
1 cucumber
1 melon
2 green chilis
50 g Cashews
4 tbsp. Chili Seasoning Oil
8 tbsp. Melon Vinegar
6 tbsp. soy sauce.
1 bunch coriander

 

Instructions

180 g glass noodles cut into smaller pieces by using scissors and boil in hot water according to the descripiton on the package.
3 spring onions clean and cut into fine rings.
1 cucumber peel, cut into halves lengthwise, remove the seeds with a spoon and cut into cubes.
1 melon cut into halves, remove seeds and pulp with a small melon-baller.
2 green chilis cut into halves, remove the seeds and chop.
50 g Cashews chop coarsely and slightly roast in a pan without using fat.
Blend
4 tbsp. Chili Seasoning Oil
8 tbsp. Melon Vinegar and
6 tbsp. soy sauce.
1 bunch coriander remove the leaves and chop coarsely.
Mix the glass noodles, the cucumber cubes, 2/3 of the melon balls, spring-onions, Cashews and half of the herbs with the marinade.
Before Serving, sprinkle the salad with the remaining melon balls and herbs.
